spring harvest

I overwinter some root crops and just harvested a fresh, juicy, sweet, large carrot yesterday from the garden as soon as the snow was gone. Yummy!

I usually have potatoes over-wintered but dug them all last fall and now have bags of potato sprouts ready to plant. Carrots and parsnips are so good in the spring though it's been a while since I've had a spring harvest.. I dug a couple dandelions which are starting to leaf out, but it's the chives that I'm enjoying the most at the moment in home made hummus.
