Complex/Simple carbohydrate in grain sprouts

Date: May 02, 2011 08:14AM I am trying to ascertain the simple/complex carbohydrate balance in grain sprouts. I know when you sprout grains (I am doing wheat, oats and quinoa) the complex carbohydrate turn to simple carbohydrate, and I have read that the longer you sprout them for the more complex gets turned into simple.

Date: June 22, 2011 09:33PM it's not simple vs. complex, it's starch vs. plant. As the plant sprouts, the seed from which it sprang is gone and it's mostly cellulose and water. Right after it sprouts, you get a huge reduction in starch and fat as the plant is using that to grow, but not long. Oversprouting is a huge problem if you miss the boat.
