How to get started with Microgreens

I am wanting to start growing microgreens. The process looks straightforward (plant seeds in trays, keep dark for 3 days then spray daily on a kitchen windowsill), but there are a couple of things I am not sure about:

1 - Growing medium. How to understand if this is nutritious enough as well as vegan? I see a lot of people saying that coconut coir is ideal for microgreens, but would this be enough on its own or would I need to add it to some sort of soil or compost?

2 - Added Nutrition. Would it be a good idea to add something to the growing medium, like kelp fertilizer, to increase the nutrient content? Or would there be any problem with this? Would I add this to the soak water and spray water as well?
