Eggplants and green beans - ideas for use in raw state?

Date: June 07, 2010 12:06AM We planted the garden before deciding to go totally raw. So now my garden is going great guns and the eggplant and pintos,, purple hull and grean beans are needing picking. I am not sure if I should juice them, chop them etc. - is there a health reason not too? Re: Eggplants and green beans - ideas for use in raw state?

Baba Ghanoush Soak eggplant in water, vinegar and sea salt overnight. Rinse and squeeze liquid out. Blend eggplant with bell pepper, pressed garlic, basil, tahini, lemon juice, cumin, parsley, sea salt and pepper. Date: November 09, 2010 09:53PM My grandmother used to make a raw bean type salad (vinegar base) and she would add green beans to that. It had carrots, red peppers, etc. I think she used quite a bit of items from her garden, whatever was seasonal. It was good.
