Toxicity of bean sprouts

Not a new topic--we plant bean seed (blue lake and lima) in potting soil and pull the sprouts after the permanent leaves show up. We wash them and toss them in a bowl of other uncooked veggies, including purslane, and some vinegar and olive oil. Sure tastes good.

Are we playing with fire?

I am not sure about blue lake or lima, but I know red beans/kidney beans are toxic, sprouted or not...

some people eat lima bean sprouts. I wouldnt though.

the ONLY beans that should be sprouted IMO are mung beans, lentils, adzuki beans (less than mung beans tho as they're hard to digest), and maybe chickpeas but only for raw hummus, otherwise eat them VERY!!! sparingly. Oh yea and peas but again still these shd be sparingly also.

@meg yeah, only cooking gets rid of the toxins in red beans... depending on the individual, anywhere from I believe its 8 raw or sprouted kidney beans, to around 50 ish eaten at one time can be deadly.

Good info. I was reading on another forum about people that needed to be hospitalized for this type of thing. I will definitely pass on red kidney beans.

I also dont know the answer to this as by the time the permanent leaves come I suppose the original bean has totally changed. However since there are many other types of beans that you could use in the same way that would seem safer why not pass on the limas and try other types out?

hi, i am brand new. my first entry,. when you say, eat sparingly. are you meaning the hummus or the chickpeas in another form or just as chick peas. i made my first raw hummus and it was very good. how long does that last in frig? is this bad for you? i thought raw would be best? thanks, bonnie

best thing to do is go to www.sproutpeople.com .. take a look at what beans they sell for sprouting .. those are a safe bet for the beans that are safe any other beans .. id question smiling smiley
