BEST Seeds and Why...

I am brand brand new to Raw veganism (is that a word?). I would totally love to hear y'alls feedback on what seeds are best to buy for an organic garden and WHY. Though I've never done it, I know that if I am going to start from seed, I need to get started ASAP indoors. I am in Zone 8B if that helps with any advice you might like to throw my way. The plot that we have available is odd shaped. In feet, it measures, 34 X 48 X 28 X 37.5. We've only ever done 1 partial garden (used 1/5 of our plot), but really want to delve in this year. I've heard it said that certain seeds are not good to grow plants from because of the tampering that humans have done with them. Yes?? So excited to check some of these sites out. Really kind of you to take the time to type them all out for me.
