Another bit of info that may be useful for you is that the tempurature affects the rate at which the honey will crystalize. Intuitively, warmer honey will stay liquid longer.

Honey straight from the hive is always in liquid form. Over time, if left to sit, unopened (or opened very little), it will crystalize. However, if it has been heated (which will destroy things like enzymes and antioxidants) and filtered (which removes pollen grains), it will stay liquid indefinitely. Our honey is totally raw - everything the bees put it in is still in it.
