I'm aware of the pasteurization and organic issues. My doubt was whether if the processes of digestibility increase took place equally in the whole or broken form (of any nut, no particular one). Or put it in another way, if the transformations occuring during soaking are locally or globally triggered. I'm soaking nuts overnight in order to eat them the next day (i'm not sprouting them). To this end, is there any difference between soaking the nuts in their whole or broken form?

I have this problem with sprouted legumes: they all taste too bitter to me, and the bitterness gets stronger with every bite until becoming unbearable. Any tips on this? Am i doing something wrong? Does anyone have/had the same problem? It's so sad, i really want to eat sprouted legumes
