Thanks very much for this very helpful information. Sadly, even sprouted and fermented nuts are not digestible to me. This is really a shame as I love them and they would be a great and very easy source of fat and protein. I should add that I also eat some fruit, but try to keep the amount low, as it seems to bring on some digestive discomfort (I think due to the sugar content)

Hi Realise I am coming to this several months after the original discussion, but is a lack of minerals the only problem with using distilled water, or are there other reasons not to use it? If it is the only reason, could it be overcome by using distilled water with liquid kelp added to it?

Thanks I like to eat mung after a soak and 1-2 rinses, when the shoots are just starting - I find them most tastey at that time, and much less so later. Am I missing something nutritionally (or doing anything dangerous) by eating them early?

HI I like to eat them when the first signs of shoots are just starting to come - they seem tastier at this time and I have read that it is at this moment that their nutritional value is most potent. However, I have read elsewhere that it is more beneficial to allow them to grow for a few days first. Does anyone know which is correct?
