WY - I think you are right on - we don't question enough and take for face value what the gov and other "authorities" or "experts/gurus" tell us. We SHOULD question everything! At least to a degree anyway.

Wow, that is one indepth post batochef!! Interestingly, I learned so much about cutting boards. I also realized that last night I botched my bamboo cutting board....thought I was doing a great job cleaning up my pineapple feast by dousing the board in soap and water. UGH!!! EWWWWW! Phantom, you are so right, I try not to think about it, especially since I have never worked in a rest so I try to tell myself that the horror stories are just that - stories! That was my concern - the blade. I am definitely going to try it - and love the guac idea. I have been making salsa frequently to put on top of salads, but am surprised by how sensitive I am to cilantro and onions now. Whew! A little goes a long way, and before going raw, I could eat both in much larger quantities.

I also wanted to add that at one point I got way too thin - I had cut back on the amount of fruit that I was eating, and was eating more veggies. I am about 5'8 or so and my weight went down to 108. I have brought it back up, to about 115, which is still low. I feel great, and I run about 2 miles a day or more depending on my energy level and the heat in florida! I don't eat a lot of fat - a
