What kind of blender do you have? Most have enough power to handle the job efficiently. 1/4" or less would seem to work well enough though!

Good points about plastic vs. SS and I would agree teflex or teflon is inert at low temperatures however, I'll take stainless steel over plastic any day. There is something unnatural about plastic and food that turns me off. Even if you are only preparing foods at around 100F, SS is used in commercial food preparation and I doubt a plastic appliance that came in contact with food would ever recei

The air flow is from back to front, the same as excalibur. What I like about these dehydrators is that they are food grade stainless steel. There is just something about heating food in plastic that doesn't make sence. Especially polycarbonate plastic that contains BPA's.

I don't think it's a good idea to keep any dehydrated food lying around at room temperature unless it's stored properly. I have quite a few airtight containers in the pantry for just that purpose. As for your vegan sausages, I would keep them in the freezer and reheat as needed. As for freezer storage, ideally I would keep them vacuumed sealed. If you don't have a vacuum sealer

I found the same dehydrator under a different name brand, TSM Harvest and it sells for $50 less ($129.99) than the good 4 you dehydrator. They also have some very nice ss dehydrators that I've heard good things about but they're a bit pricy. www.homefoodprocessing.com
