I think it's important never to mix fats with fruit, and to keep fat intake in general below 10% of cals like Doug Graham and so many other lowfat studies suggest. Here's an article about fructose and AGE's (Advanced Glycation Endproducts) which damage cells and tissues. It doesn't mention fruit at all though, it's talking about high fructose corn syrup. A copper deficiency can cause gray hairs. And it's reversible if you start getting enough. Since going raw I've noticed quite a few plucked gray hairs which were actually dark at the root again, it's pretty amazing. I'm getting plenty of copper nowadays. There may be other nutritional factors too other than copper.

Hemp seeds have roughly the same amount of zinc as pumpkin seeds I believe, and also have a fair bit of vitamin E and some omega3. Fairly high in protein, being also a complete protein source (contain all essential amino acids). They are somewhat of a superfood in my opinion. I'm gonna start buying them in bulk I think, I've seen a price of $50 for 5lbs online (vs like $1/oz at the HFS). Best

Very interesting, thanks for the update. I tried making it again myself, this time dehydrating the nuts after soaking, and strictly with the Blendtec. Didn't work out so well. Since I regularly make smooth tahini and have made smooth peanut butter a few times, both without addition of oil, I was optimistic about doing the same with hazelnuts, but something about them is just stubborn. I ended up moving it to the food processor to finish it up. to the $30 food processor from the $400 blendtec! although I'm positive a food processor could not make tahini like the blendtec. FYI, I contacted Blendtec and they are supposedly coming out with a BPA-free container some time in the middle of the year. That's good news, if (when) I need to replace my container I'll be able to get one of those.

I make it with a Blendtec. I start with 2 cups dry sesame seeds and dry container. I use numerous cycles at speed 1, using a wooden spoon to push the side buildup into the center, until it no longer cavitates (where it mounds up around the sides and the blade whirs fruitlessly).
