All leaves from vegetables from the cabbage family (think broccoli, cauliflower, but also turnips, kohlrabi, radishes, daikon etc.) are edible as well.

I have one flowering in the yard. They even sell good quality, organic stevia plants in the local supermarket here now
But I know quite a few people working at small-scale plant nurseries, and they all tell me it's hard to grow it from seeds. I've never really tried it myself though.

Good question. No experience with that though.
Do you know Sandor Katz's book on Wild Fermentation? He has a website too, with a fermentation support forum - I think that might be the ideal place to get an answer to your question.

I have made my own at home for many years, but now I switched to water kefir as I found kombucha needs a lot more care. The later you 'harvest' kombucha, the more sugar has been transformed by the scoby into lactic acid, but the more acidic it is as well. I kind of ike it that way though, sometimes I diluted it a bit with water if I found the favor too strong.
