Got hubbard squash. It is like a brick. Got any raw suggestions on peeling. The food processor S blade would take a toll on it and truthfully can't even cut to put in. I know all about cooked, but trying to figure this raw thing out for HARD squashes. I know pies would be nice to make or even burgers, but first have to get the "brick" cut up. I called their CA offices, answered phone as if in a house, and gave me shipping prices for a pound bag: $13 to CO which I thought was super high. I didn't notice any salty taste to them when I tasted my friend's dish. I love the fact low in calories. Can't find here sadly so my choices are order, buy locally $4.50 per bag plus tax or skip the thought. carolg

My new batch is doing great. Added more salt, covering jar with paper towel or thin dishcloth, got rid of thinking about using a plate again, using horseradish leaves and grape leaves too. Working great. carolg

Jodi, thanks for reply ands asking friend. I did start another batch already and doing well. I think putting the plate on the top was the troublemaker, but now with just a paper towel, so far so good. It's been 2 days in the making. Reducing the salt was not the problem last year, but this year I'm calling it "plate disability." carolg

If it was me in your situation, I would try the oven, which you have on hand, especially if you can't see buying a dehydrator now. Yes, watch the temperatures--may start around 145 for two hours and then bring it down to 105. I think it was Gabriel Cousins who wrote about temperatures. Maybe others will add their insight. Anyone making raw pickles? Would love some help. Maybe putting a plate on it vs. the paper towels caused the scum this time. Monitoring it with two new batches. Also not cutting off tips of pickles either. For me saw it getting too soft inside pickle. Just through my experience as others may not have that problem. carolg

Last year I used the following recipe successfully. This year I have scum settling on my finished pickles still on the counter. I can't figure out the problem. Well, I goofed. I thought I was making Eggplant Parmesan, pulled up a recipe that was actually Lasagna, but it looks great, teased self and tasted a little plus needing to freeze a ton of it. I read somewhere to soak in olive oil and lemon juice. It took lots of olive oil and of course we know enough is enough. I see recipe here says salt water? Any try this version of soaking? Also wonder about substitute for pine nuts or another type of breading? Must I bread????????? Thanks. carolg

I make similiar one but I put everything in the food processor, but kale alone. It's small pieces, but love it this way. I even add celery and sometimes lettuce too. Wow, thank God for kale. Great organic prices here too for that from Sunflower Market which is in a few states. Their prices RAWK. Worth the drive for me. carolg
