There are plenty verifiable scientific reasons for the health benefits of raw foods. Obviously there are other reasons, still unknown or unverified, but I don't see the point in focusing on those reasons, when they might not be true at all. We can talk about what we know for now, and speculate, but we don't need to pretend that unverified things are proven.

I don't think the problem is necessarily the content (though it certainly could be driving the addictive behavior), but the mindless eating. You could decide to just eat carrots, and it would be harder, but you could eat them until you felt sick. When I overeat a lot I can get constipated. I have tracked and sometimes I'll have eaten 3500 calories and 150 g fiber--it's just way too much to be moved along. Fiber's not the issue, I just have to listen to my body.

Everything everyone has said--basically, if you can't digest something (forreasons given above and/or others), the bacteria in your gut will digest it for you => smelly by-product. Like Pistachio said. Why you can't digest could be lots of reasons. I have horrible digestion when I overeat, it's just too much.

True on blanching, not raw. Fruits are not normally blanched--not cooked, not fresh. It is a compromise, but sometimes we take a compromise because it's better than another choice, and only we can be the judge of that.

I just want to say, caloric restriction is *supposed* to lower metabolism, that is what slows down aging. But I agree that it can be done intuitively with lots of greens and veggies, to avoid going insane!

I love the pictures in Juliano's book but would never make anything as listed. 80/10/10 proponents often say gourmet raw is 60% fat by calories--I would be *surprised* if his book was that low! I would rather take a supplement, then eat dirt that a supplement had been put in a long time ago. Women with pica (cravings for non-food items) will sometimes from the bacteria in the dirt they eat--it's not safe. I don't wash my produce well (well, out of laziness more than anything else), but a handful of dirt is another story. Not human food!

I think enzyme theory is bunk, so I won't speak to that. Fresh is normally best. There is some structural damage and nutrient loss. As far as nutrient loss goes, it can be far less than something picked from afar, shipped, and stored at the grocery store for a long time. If plants are too deficient in vitamins and minerals, they *can't grow*. You can't grow many plants in nutrient-deficient soil. When they grow fine, it's because they *do* have everything they need. If you are not active your calorie needs are very low. If you are eating less calories, you are eating less protein. It might not be enough. 1000 calories of fruit, for instance, doesn't have enough protein. You have to be active to be healthy (to what degree is debatable. Marathon running certainly doesn't promote longevity). Being active will also increase calorie needs.
