when i started out i basically lived on raw nuts, bananas, and apple cider. (ok and peanut butter and jelly sandwiches 50/50 to start) i just did that then added salads and recipes slowly and experimented with the dehydrator.

I'm pretty sure bok choy is one of the rare veggies that have calcium in them. The baby variety isn't too bad marinated raw.
you're gonna want nuts
sunflower seeds are a nice cheaper alternative
good luck!

My favorite cookbook is Juliano's Raw The Uncook book. He's a bit "gourmet," but it was a great starting point for me. The whole book is a great read and not just some boring nutrition facts. i got these great salad dryer bags at the fleamarket one day. you just put the lettuce in a cotton bag and give em a shake. I love them.
thinking about it, some med/heavy cotton muslin would probably work too, just lay it out like on a towel and gather it up and give it a shake or two (muslin's pretty cheap to buy)
nice and dry

Hi. The way I learned it is to lay it out briefly on a damp papertowel before rolling up. It makes a big difference. I forget where I read it. I've seen some recipes in books to use them as wrappers for like veggies and raw pate or something. I haven't tried it but that sounds like it might be good. I think it was Ani's Rawfood Kitchen. Anyway good luck and did you use wasabi with it?
