I believe that most,if not all the protein in leaves and all vegetables are stuctured. Only ripe fruits contain free form amino acids. However,the proteins in leafy greens are disassembled and reassembled very easy. Much easier than the denser proteins found in seeds and animal tissue....Sorry,I don't have the percentages that you seek.

Yes, you are correct. They do contain a high amount of amino acids,thus having a high caloric percentage.But greens are so low in total calories,that the body won't get toxic amounts of protein...in other words,leafy greens provide a small amount of high quality protein. Plus the fact that leafy greens are almost always eaten raw keeps them in an unaltered natural state.

Go easy on the phosphorus and Protein,they are very acidic. There should be a higher Ca to P ratio for better absorption...leafy greens are the best sources of calcium...Actually potassium,magnesium,boron and sunshine are as important as calcium for bone health.

CleanJan, The fatty acids in fish are not essential for humans. Bryan's approach is the most sensible approach to this issue. More greens and the elimination of vegetable oils. Balance is the key. However,if you feel like you want to consume more EPA & DHA there are vegan sources.

All the pioneers responsible for reversing serious chronic diseases,Barnard,McDougall,Pritikin,Ornish,etc. recommend 10% or less caloric fat.

Yes,this happens as well. Dr. Neal Barnard explains this in his book on reversing diabetes. He also says excess fat is in the muscle cells as well, preventing insulin function.

I got my girfriend on a high raw,low-fat vegan diet and she was taking oral medication and using two inhalers. After about 6 months her symptoms stopped and she is off all medication...if she eats nuts,however,she starts to wheez. If you are overweight,losing it will help a lot.

I feel that dietary manipulation should always be tried before iron supplementation. Blood loss is usually a common cause of iron deficiency. However,a raw diet is not deficient in iron. High banana,high green leaf intake,and NO dairy leaves a nice balance.

Congratulations! What an opportunity to experience and compare the advanages of a high raw plant-based diet. I would suggest that you add some "vegan DHA" throughout your pregnancy and lactation. And some B-12 too,for assurance only. Other than that,relax and enjoy. Lots of leafy greens. A must!
