I ate plenty of it when still eating tons of veggies. Made for a great salad topping. You'll have to try it for yourself...if you wish...and see how you handle it.

I love it...but it has to be as fresh as possible. When it's a few days old, it tastes starchy and doesn't digest well.

I love raw corn on the cob. Like Sparker says, it has to be fresh. When it's really good I can't help but wonder why anyone ever cooks it.

Since corn is *the* #1 GMO crop, though, I would take care to buy organic if you have the choice. That was one thing that always made me paranoid. angry smiley

I love it rolled up in romaine leaves with some chopped tomato and basil. It's also heavenly if you smear some soft avocado on it.



( the rolled up corn has been taken off the cob, obviously.... tongue sticking out smiley )

I bought conventional corn once this winter when I was craving it, but I mostly hold out for the organic. These means I get a short corn season and have to dream the rest of the year. Sigh. I am so thrilled that it's spring!!

Fresh raw corn on the cob is one of those foods that can never be improved upon. Ah, my sweet, sweet corn! I made soft raw taco shells last year, and that helped me to enjoy a delicious raw dinner with my extended family - a rare opportunity - but when it's fresh, organic and in season, corn can't possibly taste better than it does directly off the cob.

I grow mine and eat it right off the plant. Sweet.
In the US, I'd be really careful buying corn, organic or not. Corn pollen is so light, it can travel for really long distances, and there is so much gmo corn growing, that I think it's virtually impossible to find commercial organic corn that has not been contaminated. Your best guess is to try to get some from a local farmer growing corn far from the big growing regions.
Buy some organic corn in big commercial, and send it for testing to a lab, and see what comes out. You'll be scared.

Raw corn juice is good and its easy to make in a Champion juicer and probably other juicers as well. Cut the corn off by running your knife close to the hard core of the cob going the long way down the cob and cutting the corn and the soft part of the cob off in long strips. Repeat for rows of corn strips around the cob until all the corn is removed and all that is left is the hard core. Then just put the strips into the juicer. It makes a sweet and delicious juice.

SGC, you're right, of course. I'm in the U.S. and buy my corn at my local farmer's market. That's no guarantor of safety, but Central New York is not a major zone for commercial corn (though it is grown). In fact, I often get only three or four weeks of good corn supply in the year.

I have read in several books that corn,even cooked,is toxic to the body.
Something called "aflotoxin".

Yes, and it sprouts very easily (dried Yellow
and Purple). That's probably the best way to take it, but
I've just been soaking and adding to my Green Smoothies.
