Sun Dried Tomatoes

I bought a package of sun dried tomatoes and just used some of them to make marinara sauce. Yummy! My first attempt at raw spaghetti, and I really liked it!

Now here for the dumb question. How do you store the sun dried tomatoes after you've opened the package? Do I just need to refrigerate them, or can they sit out? And how long will they keep?

I'm loving all the experimenting. Yesterday, I made a raw bluebery cheesecake, and my entire family loved it. You know... the ones that think my eating is extreme... smiling smiley

I just keep mine in a plastic baggie on the counter. They stay nice and fresh as long as they don't get exposed to humidity. Isn't marinara sauce awesome?

Blueberry cheesecake?! Do you have the recipe? *pants*

Raw again since April 29, 2008.

Thanks for the info. I'll just keep them on the counter then.

Now for the BB "cheesecake". Here's the recipe:

Crust:
2 cups almonds
1 cup dates (soaked and pitted)
Place the almonds in a blender and blend until fine.
Add dates and blend until well blended.
Pat crust into pie plate

Filling:
4 cups cashews
1 large lemon, juiced
5-6 tablespoons agave nectar
2 teaspoons vanilla
2 cups blueberries
1 cup water
Place the cashews, agave, vanilla, lemon and water in a blender or food processor and process until smooth and creamy.
Remove this mixture from blender and stir in the blueberries.
Pour filling into pie crust. Chill

It was soooo good!!! I'm ready to make it again. smiling smiley

All the Sun-Dried Tomatoes I've ever seen have Salt added
as a Preservative. I'd like to buy some without the Salt.....WY

The sun-dried tomatoes I get at my co-op have absolutely nothing added - not even salt, which is great. Recently, though, I was traveling and could only find a more commercial package of sun-dried tomatoes. The unusual thing about them is that they were not completely dry. They were partially moist for easier snacking out of the bag. I don't know how common this is, but I would add that open packages of not-quite-dry dried foods should probably refrigerated.
