Date: July 26, 2008 08:40PM I made the most delicious raw blueberry pie yesterday.
So just now, I was dishing myself up a piece of it, and I asked my 18 yr old daughter if she would like some. She said, no thanks, I don't really like raw food. She was sitting on the couch eating a big bowl of cut up pineapple when she said that!! HA HA !! Sapphire Re: My raw blueberry pie

Crust: Pecans Dates (not pre-soaked) (was supposed to be almonds, but I ran out) Blended in the food processor and pressed into the pie plate. Filling: About a cup and a half of blueberries blended with about half a cup or so of (pre-soaked) dates and some lemon juice Then stir in a couple cups of blueberries. I think the dates give it such a wonderful "fudgy" taste - can't stop eating it! All my measurements are approximate, so adjust if you want to. Do you powder the almonds in teh food processor and then blend it with the dates. What is teh consistency like? Can you please give elaborate recipe for me? My kids love raw pie and the last time I made it it didn't come out good. The one before that was really good, I forgot though, if I powdered teh almonds or put dates and almonds together in the food processor and blended them together... First of all, I presoaked about half a cup or a bit more of medjool dates for a couple of hours. Then, I ground up the pecans in the food processor first, fairly fine. (about 2 cups), (but I am sure almonds or walnuts would be just as good, so long as you can ground them up.) Next, I added about half a cup or so of chopped up (not pre-soaked) medjool dates (I like to pre-chop them just in case the food processer leaves too many big chunks.) and blended it well. Then I put the concoction into a pie plate (it was crumbly and sticky), and just pressed it into shape with my fingers to make the pie crust. (I didn't dehydrate it, but I bet it would be good to do so, if anyone tries that, please let me know) For the filling, (in my vitamix) I put 1.5 generous cups of blueberries, the soaked (drained) dates, some lemon juice (I started with 1 tbsp, but when I tasted it, I added a little extra juice, but not a lot. Add a little, but taste before you decide if it needs more) When this was all mixed smoothly, I poured it into a bowl, and stirred in another two cups of whole blueberries. Then I put it into the pie crust and chilled in the fridge. You could probably add some pretty garnishes, but I thought it looked very appetizing just like that. Good luck! Sapphire Edited 1 time(s). i think that the trick is chilling it overnight when i made my fruit cake and didn't chill it it fell apart then i chilled it and it held in place it was really pretty too i made it for a really cool couple they loved it and even froze some of it so they could take it to their trip with them LOL Re: My raw blueberry pie

when i made my fruit cake ( it was a long time ago) i layered it with things that would potentially make it "stick" how long did it take for you to chill your blueberry pie without it falling apart when you cut a slice? birthday party is coming up it will be good to bring something festive Re: My raw blueberry pie

To tell the truth, mine didn't hold its shape real well when I sliced it, but I didn't really care. I suppose if I wanted to serve it up to company, I might try adding a little psyllium or something to thicken it a bit more and of course chilling it for a while. I'd probably also try to garnish it maybe with just a little grated lemon peel or coconut or something. Even my grandma's cooked blueberry pies, (which were the best blueberry pies in the entire cooked world!) never really held their shape real well, so I guess I have never thought it was important! Date: July 30, 2008 06:36PM My raw blueberry pie (that I invented!) was somewhat different and DOES hold its shape extremely well, and does not need to be refrigerated...Okay, so I'm bragging, LOL
Crust: crumble whatever nuts in a food processor into a powder with a tiny bit of salt (I actually put a tsp of powdered sugar, I know, I know....) pour into pie dish an amount needed to cover the bottom, add coconut oil and smush into place (I use homemade raw butter sometimes - not a vegan, but a tiny bit of coconut oil works great) Filling: 3 or 4 tbsp liquid sweetener - agave, maple syrup honey etc - or you could use a watery date paste mixture --- , and a little fruit juice (I juiced some blueberries) mixed with approx 2 TBSP psyllium husk powder - enough to coat the blueberries... Mix in blueberries and smush into pie plate. Let set 10 min, or overnight. I didn't refrigerate when I left it overnight. The psyllium helps it hold together extremely well! ALSO: There's a really good source for organic date paste (no need to soak) and it's cheaper than organic dates: Shield's Indio CA 1-800-414-2555 But you have to go in with some friends, it's a 40-lb minimum!
