What has happened to my seed?

Hi,

I sprouted some amaranth and after just two days in the fridge they got this pink tone and burn in my mouth. This is the same thing that happens to my wheat sprouts, only it takes usually a week.

Amaranth sprouts are usually pink and bitter-tasting.

Ok, so the pink color is supposed to be there and is not a sign of rancidness which probably caused the burning in my mouth.

sprout only until the shoot is as long as the seed, that's the optimum time for eating them nutrition wise. eat them up as soon as possible if they are delicate like amranth or broccoli, keep them in the fridge for longer if they are lentils or grains. burning or a rancid taste indicates sprouts that have gone off or else sprouts that are just not right for you. quinoa make nice sprouts and they're a bit easier than those teensy weensy amranth seeds too!
