Yes. Perfectly OK. The younger plants will be less bitter. Try refrigerating overnight first to reduce bitterness also.

I love raw beet greens in my salad. To avoid bitter tasting and throat burning oxalic acid, be sure to peal beets thoroughly before juicing or shredding them into salads. (Cooking neutralizes oxalic acid).

Thanks everyone, this is great, I'm gonna juice them right now, and on the same note, how about carrot tops? Right now I give them to my neighbors chickens.

I just read the wiki article. I will start out with only one stalk.

Yes. Carrot tops are perfectly edible. The taste....that's up to you! Folks miss out on a lot of great things that could make excellent salads, slaws & stuffing: Kale, Chard, Nappa Cabbage, various other cabbages, carrot greens, radish greens, bok choy, etc. Have fun!

I think beets are one one of the best foods for liver detox. Books Iv'e read say to start with only 3oz a day at first, then you can up the amount day by day because they are so powerfull.
