I recall reading in one book that said raw corn was a vegetable and cooked corn was a grain. So is it on the ok list? thanks Re: Do you eat corn on the cob?

Some say corn is infested with aflotoxen-a fungus commonly seen in corn crops and a carcinogen. I love sweet summer corn, but hold off from huge amounts because it can aggravate blood sugar issues. So..is corn really safe to eat? Vinny Re: Do you eat corn on the cob?

Date: May 30, 2009 06:03PM The sooner corn can be eaten right after harvesting, the better. The natural corn sugars start to turn starchy after corn is picked, and raw starchy corn is harder to digest.
The sweeter corn varieties are probably best for eating raw. Re: Do you eat corn on the cob?

Date: May 31, 2009 01:22AM I found a recipe in which the corn kernels are processed with some cumin and garlic and then placed in the dehydrator for a while just so it will hold together, and then used for enchiladas. Re: Do you eat corn on the cob?

i love corn. usually i cut it off of the cob with a sharp knife, toss in some diced tomatoes, jalepenos, and maybe a little lemon and olive oil....one of my very favorite salads. sometimes i process the corn with a touch of jalepenos and tad of good salt and make tortilla chips using the dehydrator, but straight off the cob is my fav. Date: July 14, 2009 07:51PM Actually, you are much better off eating cooked corn on the cob.
[www.eatrightamerica.com] "Cooking corn also has been shown to significantly boost its antioxidant activity, despite reduction in vitamin C.When the ability to quench free radicals was measured, cooked corn outperformed raw corn by between 25 to 50 percent. Cooking corn releases a compound called ferulic acid, which provides anti-cancer health benefits. Ferulic acid, a phytochemical, is unique in that it is found only in very low amounts in fruits and vegetables, but is found in very high amounts in corn. The availability to the body of ferulic acid can be increased 500 to 900 percent by cooking the corn." Man saying that is Joel Fuhrman, a board certified MD who while genrally supportive of raw food diets essentially "tells it like it is" Eating corn raw is fine. I'll take mine in this case cooked, thank you. Sorry, only registered users may post in this forum.
