Do you eat corn on the cob?

Hi.
I recall reading in one book that said raw corn was a vegetable and cooked corn was a grain. So is it on the ok list?

I love corn. I just cut it off with a knife and eat. Sometimes add other ingredients. It's very delicious, way better than cooking it.

Fresh raw corn juice is delicious. I cut it off as close to the hard center as I can and feed it into my Champion juicer in long strips. Yummy.

This is one of those foods that some say is fine and others say is poison.
Some say corn is infested with aflotoxen-a fungus commonly seen in corn crops and a carcinogen.
I love sweet summer corn,but hold off from huge amounts because it can aggravate blood sugar issues.

So..is corn really safe to eat?

The sooner corn can be eaten right after harvesting, the better. The natural corn sugars start to turn starchy after corn is picked, and raw starchy corn is harder to digest.

The sweeter corn varieties are probably best for eating raw.

I found a recipe in which the corn kernels are processed with some cumin and garlic and then placed in the dehydrator for a while just so it will hold together, and then used for enchiladas.

mmm suzie, sounds good.

i love corn. usually i cut it off of the cob with a sharp knife, toss in some diced tomatoes, jalepenos, and maybe a little lemon and olive oil....one of my very favorite salads. sometimes i process the corn with a touch of jalepenos and tad of good salt and make tortilla chips using the dehydrator, but straight off the cob is my fav.

Yes, I love raw coc!! I usually eat mine stratght from the cob without any additives.

As for digestion... I've had no troubles.

My 2 fav ways to eat besides plain or with a dash of salt.:
Corn, cut off the cob
Onion, chopped
Garlic, chopped
Dash Salt
Optional: Chopped Tomato
Mix together in bowl.
or
Corn, cut off the cob
Avocado, mashed
Garlic, chopped
Dash Salt
Mix together in bowl.

i eat alot of fresh raw corn at when it starts to be ready , im fortunate as the family farm produces sweet corn for sale so i get it as fresh as i pick it smiling smiley

when we are selling it on the side of the road im just sitting under my brella' munching away , ive had so many people say wow i thought you had to cook it to eat it !

im like no way that just ruins it ! =D

Even seen the infected corn on don't eat it steve? I'm not trying to turn people off corn, just saying that even if it has mold or whatever, might still be edible or a delicacy in some places. smiling smiley

Man saying that is Joel Fuhrman, a board certified MD who while genrally supportive of raw food diets essentially "tells it like it is" Eating corn raw is fine. I'll take mine in this case cooked, thank you.
