You'll be looking for very little overt fat (or only occasionally) to keep overall fat intake under ten percent of calories.

So this sort of ends the "classic" raw foodist salad, which is frequently laden with oils, covered with avocados and olives, etc.

I often will eat leafy greens mixed with citrus fruits, which I find to be especially enjoyable.

In terms of "regular" salads (tons of lettuce or spinach with tomatoes and celery), I like to throw this: [www.raw-food-health.net]
dressing on top. Don't add any overt fat and you've got a very tasty and healthy salad dressing. The basil and whatever other herbs you choose to add make it almost take like pasta sauce. I eat that for much of the summer when my garden is producing.

I don't eat this frequently because corn is not ideal for digestion, but I really love a good corn salad when I can get the corn fresh. I wouldn't suggest you try to make it out of season, because the sugar in corn rapidly turns to starch after it's been picked.

2 bananas
2 mangoes
cut and put on top!!

a whole head of romaine wrapped around a BANANA...
Puerto Rican Banana is best!!

Blend 2 mangoes and a couple stalks of celery
Pour on lettuce'
If you are not 100% balsamic vinegar makes the dressing YUMMY

Any fruit blended or chopped or BOTH on baby organic greens RAWKS!
