How do you get Vitamin D in the winter?..like in Utah lol..
I'm going to be there for 2 weeks..

In the north, you have to supplement or hope your stores have enough, because the wavelength that produces vit D doesn't reach me until mid-March (am at 42 degrees latitude).
I take a supplement because deficiency leads to things like cancer, nothing readily apparent.

So the sun never shines in the day in Utah? Not even for an hour midday, ie enough to get out there for ten minutes?

Have you been out in the sun for, on average, higher than ten minutes a day over the last few months in the area you live? If you have, you'll likely have some stored Vitamin D anyway.

I take d2, it is not from an animal, it doesn't damage the skin, and it works as well as d3 according to the latest.

If you expose mushrooms to the sun they absorb vitamin D and mushrooms such as shitake and cordyceps absorb a lot of it if exposed to the sun.

If you need a supplement you can get a plant based vegan D 3 [awakenedshoppe.com]

rather than resort to rancid mercury filled cod liver oil or synthetic D2
