When I read the title I was totally prepared to write:
"That's what she said!"

Hehehe...

On a serious note, I don't have the answer to your question but the chocolate almond bars sound yummy! Can you post the recipe?

1/2 C Coconut oil
1/2 C Cacao powder
1/2 C Maple syrup (the more I use this the more I have found that it really compliments chocolate so well!)
1 tsp Vanilla extract
1/2 C Chopped almonds

even in the freezer after I take it out it melts quickly----should I increase the coconut oil?

Or should I use cocoa butter?

Cocoa butter is very hard at room temp... maybe try that. Are you following a recipe at all or just winging it? If you use a recipe that's got good review you might have more success. Check out the sunny raw blog, her stuff is usually delicious and gourmet.

The maple syrup--it resists freezing, plus, that's a high proportion of liquid to solids, especially if the coconut oil is liquified. Try reducing the coconut oil, IMO. Good luck.

I did a recipe where i liquified coconut oil recently, freezed and they stayed hard at room temperature.

Id say your right tamukha about the ratio of liquids to solids.

I agree, all that maple syrup is probably a big part of it... although I agree, maple goes well with chocolate, lol
