lentil sprout greens - edible..?

Hi folks

I've left some lentil sprouts too long and they're growing and growing.. they're now little green plants, about 2 inches long, looking healthy enough... I'm wondering if they're ok to eat - eg throw in the juicer etc. Tried googling whether they'd be toxic but can't seem to find any info.

Any advice appreciated, thanks smiling smiley xx

Seems to me thats the end goal of growing them?
To get the green and the chlorophyll.

Edible. They are tastiest when only a tiny sprout IMO though. If there are leaves set them in the sun for a day or two so that they'll turn green. Keep misted so they don't dry out.

Edible. I'd eat them in a big green salad with frisee and spinach, but that's just me grinning smiley
