lentil sprout greens - edible..?

I've left some lentil sprouts too long and they're growing and growing.. they're now little green plants, about 2 inches long, looking healthy enough... I'm wondering if they're ok to eat - eg throw in the juicer etc. Tried googling whether they'd be toxic but can't seem to find any info. Date: December 16, 2011 03:04PM Edible. They are tastiest when only a tiny sprout IMO though. If there are leaves set them in the sun for a day or two so that they'll turn green. Keep misted so they don't dry out. Re: lentil sprout greens - edible..?
