Potato replacement

I am still eating cooked English potatos but what is a good raw food to replace this. This gives me a carb and gives me a lot to go on. Is there an equivalent raw food.

if your talking..replacement for recipies

cauliflower, squashes, pumpkin

if your talking about replacement in sense of density and carbs

Its hard to beat bananas.

If you don't mind the volume, watermelon is great.

Dates also work. I like the drier Deglet Noors.

carbs aside, mashed up avocado with a little sea salt is a nice replacement for that comfort-food-feeling that mashed pototoes gives smiling smiley

I like slightly-sprouted buckwheat groats (i.e., with a "tail" only about as long as the groat) -- the taste even reminds me a little of potatoes (but mind you, it's probably been three years since I ate any potatoes to speak of). I suspect you could throw them in the blender and come up with something resembling mashed potatoes, but I haven't tried that so far.

My current favorite way to eat them is buckwheat crackers -- I just stir a pinch of sea salt into the slightly-sprouted groats, run them once through my Omega juicer with the blank cone in place, make little patty-cakes (after dipping my fingers in water so the dough won't stick), and dehydrate them directly on the mesh racks of my dehydrator till they're *very* crisp.

I should add that I don't think potatoes need replacing.

Just that healthy food does exist to make up for the calories.

Carol, I use a potatopeeler and make strips, put them on a dehydratortray and sprinkle some himalayan salt. You can also dry in the sun from morning until crisp.
