Vegan mayo recipe please!

Hey folks, I need to find an eggless mayo recipe that keeps in the fridge. Preferably not with cashews. I tried one and it seemed rather grainy and then I read it said that cashews are not good for mylks because they have soluble fiber and it cannot be filtered out. So the texture isn't the best. It's funny because I make an amazing cashew cheeze sauce that seems very creamy and not grainy but oh well.

So maybe with olive oil or almonds? I was buying Earth Balance mayo and maybe I just skimmed over it but it was pointed out that it contains CANOLA OIL, even though it is supposed to be "with olive oil." Maybe I just got fooled all along--not sure. But in any case, it's super expensive, too. I know I could make this stuff way cheaper. Just need a decent, tried-and-true recipe. That's where you guys come in! smiling smiley Thanks in advance.

This one with macadamia nuts looks good and she says you can even freeze it. Personally I'd substitute lemon juice for the vinegar and chipotle for the cayenne, though.

Thanks. The only issue is that macadamia nuts are super expensive! That is exactly what I am trying to get around. I am thinking maybe almond mayo...

Sub 1/3 of the macadamias for brazil nuts and another 1/3 with soaked sunflower seeds.

I have made mayo with tofu. I can link you to the recipes I used. And yes, you can make tofu at home, and it doesn't even have to be made from soy beans. You can make tofu from chickpeas, and you can also try making aquafaba mayo. If you haven't heard of aquafaba yet, it's the liquid from a can of chickpeas or other beans, and it's being used as an egg replacer. The same substance can also be made from flax or chia. Flax or chia gel, when strained, apparently whips up like an egg. I've had no luck making my own tofu out of soybeans, and I've had no luck making aquafaba out of home cooked chickpeas, but I did get the water from a can of chickpeas to whip up like an egg white using a stand mixer. I've seen YouTube tutorials on the flax method. And I have an aquafaba mayo recipe I can link you to. As far as vegan mayo recipes using almonds, I've tried one! It tasted and acted nothing like mayo. But I might try tweaking it some more. It came from a fantastic book- The Ayurvedic Vegan Kitchen by Talya Lutzker. Would you like that recipe? Did I mention anything else you might find useful?

the rawtarian recipe with macadamia nut looks pretty good

just use soaked walnuts and sunflower (or brazil like suez suggested)

it should turn out fine

you don't have to use macadamia nuts

anyhow..let us know how it turns out for you

and most of all

enjoy!

life is short
might as well enjoy raw vegan mayo when you get the chance to do so
