Is this true?

I have read that anything over 38 degrees isn't raw and the enzymes are destroyed. Is this true?

Some people go higher than that when they dehydrate. 38 degrees Celsius is a little above body temperature. I think some people might dehydrate their food as high as 45 degrees celsius.

If you think about it 38-45 degrees celsius is about as high as it'll go on planet earth normally. Interesting that it's at temperatures just higher than this that the enzymes die isn't it? The plants never evolved to withstand that high a temperature.

I dehydrate at 105F / 40.5C

The above posts are correct. Temperatures vary with the type of produce. You'll have to judge whether the quality of the finished product indicates live food or 'dead' food.
