Nutrient availability in juices and smoothies

I have came across some new information recently and wanted to run it pass you guys. One of the bits was about a lot of the nutrients in vegetables being fat soluble. Beta-carotene in carrots, lutein in tomatoes and vitamins K, A and E in spinach for example. This would mean that if one was to drink a juice or a smoothie with no fat, one would not absorb the nutrients.

Also there was a bit about vitamin C competing on the same metabolic pathway as the glucose in the fruit. Some of the higher sugar fruits have barely any absorbable vitamin C as a result.

Any of you guys have more info on this or know anything about this?

karmele,

If you are consuming adequate amounts of fat during the day, and have sufficient adipose tissue in your body, then metabolizing/maintaining fat soluble vitamins should not be a problem. As far as Vit C goes, I don't know where you read that Vit C uptake is interfered with by the sugar content of the fruit in which it is found. Frankly, that's a new one to me . . . could you post a link to the research that illustrated this, please?
