Sunchokes!

Well, I just discovered these funny looking babies at my local green market at Union Square in NYC. The sign above the bin said they were delicious eaten raw--- and they are!

I am trying to eat outside my usual repertoire of sameness- and now that the weather is warmer, the markets are offering up some interesting things.

Anybody prepare these in a way other than just slice and eat?

My mother used to grow lots of these things when I was a kid. We just peeled and ate them or sliced them on salads. You can substitute them for any recipes that have radish or jicama - they have a similar texture and flavor.

oh yes!

my daughter grows tons of these. she sells them to our local market.
besides slicing and eating (eat the peel too by the way!) you can put them in salads. shred if you want.

i dehydrated many pounds of these and then i ground them up in my vitamix. i filled capsules and take a couple everyday. if you don't already know...these are packed with good stuff! they are a prebiotic too!
