I've heard of people eating raw artichokes. I tried to eat a raw artichoke heard once, it was rather bitter. Maybe it wasn't really ripe? Maybe there is some trick to it, like covering it in salt and letting it sit for a while (kind of like eggplants). Maybe soaking in lemon juice for a while.

I eat thistle hearts when I get the chance. It's a bit of work getting them out, but they taste nice (a little nutty, a little like water chestnut). Since the artichoke is really just a big thistle, there must be some way of eating them raw.

can/do you eat eggplant raw and WITHOUT dehydrating?
i know you can put salt on eggplant to extract the water but i never though about eating it raw..

You can eat artichoke raw, I had one once and it was good, all you need to do is peel it (but how exactly I don't know as a friend did the one I ate).

All around the mediterranean, people have been eating raw artichokes for centuries. But they don't eat the big green ones that you can get in stores usually. The ones they eat are small purple ones. And they eat them just like the big ones cooked: bottom of the leaves and the center after removing the hair.
In salads, it's pretty good and a bit bitter for some people.

Hi Lilpaws!

I've not tried eating raw eggplant yet. But when I was eating cooked foods, i found that salting the eggplant and letting it sit for 30minutes to an hour made it taste a lot better. I'll try the dehydrated eggplant thing some time soon.

I had remember that I ate a lot of raw vegetables in my childhood because we did not have oil to cook. We were in the starving period and my father grew some vegetables nearby. I was so hungry and just picked out the eggplants and ate them. For me it tasted sweet and I like it. Also I ate at that time raw sweet potatos, green pepers, cabbages, carrots, radish and etc. Now I start to recall the life in my childhood and I think my my stoamch is easy to adapt to raw.

I tried once artichoke. I cut them in very fine shape and ate as salad.
It was ok for me.

A different kind of artichoke, the jerusalem artichoke (or sunchoke), can be eaten raw. The edible part is a root/tuber, and is usually steamed, but can be grated and used as a salad.
