Does potato color relate to nutritive value?

Date: September 19, 2006 10:43AM Yes, the highly colored ones are almost always better choices than the white ones. Yukon gold has more carotenoids than the white potatoes.
ALso, sweet potatoes (orange or purple) have more vitamins and minerals than regular potatoes. Sorry, only registered users may post in this forum.
