What Squashes Do You Eat Raw? How Do You Use Them?

Date: August 02, 2011 12:49PM I'm a big fan of spiralizing squash to make pasta-style raw recipes.
I often eat zucchini, yellow squash, and my personal favorite, kabocha. I'm curious to know if you use any more unusual raw summer or winter squashes raw, and what recipes do you use them in? Any squash-based raw soups? Re: What Squashes Do You Eat Raw? How Do You Use Them?
