Date: October 10, 2006 04:45PM Goitergenic foods contain compounds that inhibit the absorption of iodine, which in turn can foster the development of thyroid problems, such as goiters. For more info, see past postings on this board.
These compounds, present in raw cruciferous veggies, such as cabbage and broccoli, are rendered inactive by cooking. I'm wondering if fermentation does the same. Chickory Re: fementation and goitergenic veggies
