Minerals such as Zinc are hard enough to get in their proper amounts and ratio with a serving of nuts/seeds a day. Id hate to think how terribly deficient an all liquid diet would be.

No just that most fruit and vegetables are very rich in copper, so zinc/copper ratios can become imbalanced. So basing your whole diet around can make it imbalanced, then that is taken even further by restricting the diet to all liquid and just water rich fruit. Fats would be another problem long term and probably protein at some stage. I would suspect other minerals such as selenium and iodine would likely also be low. A serving of nuts and seeds which are mostly Zinc rich is an easy way to up intake of these hard to get minerals on an all raw or vegan diet.
