Caustic soda is the opposite of Sulfuric Acid

If they don't pick the olives ripe then they make the olives ripe by placing them in NaOH (almost all commercial olives).

That's why it's worth shelling out the extra cash to get them from companies that tell you exactly how they're cured (herbs, sea salt, vinegar nothing more)...

Most commercial black olives in a can are actually picked green and dyed black. I would never eat anything less than top-quality olives... you can really taste the difference, too.

Hey Phantom, I think my message did not get through.

ALL GREEN OLIVES are first cured with Caustic Soda,
then washed,
then they add herbs, sea salt, and vinegar.

What happens is that they omit the Drano ingredient as they believe it all came out.

Panchito, it is possible to cure olives with just salt. Some folk have figured out how to cure olives without salt, just letting them sit in the sun. I think John Kohler has a video of how to cure fresh olives with salt.

We've decided to avoid black olives at all, it seems they contain acrylamide which is not very good. This new info makes me wonder maybe it's better drop them altogether, black and green..

Watching that video was confusing at first, because I thought, "huh, so Joe Wurzelbacher is in the raw olive trade now? Well, good for him." But then I realized it was someone else smiling smiley

I have tried brining raw green olives in salt brine ansd water, and have ended up with something gross and rotten and inedible. Must try harder next time!

Information does affect the body. I ate half a huge watermelon and I had some stomach ache. But! I had in my mind all the olives I had eaten every day that I knew where chemically cooked in Drano. Apocalipsis, I had to go to the bathroom. This information has salpetered my ardor for all olives. My salads will not be the same.

More pure, unadulterated, raw olives for me. winking smiley

I would NEVER eat olive bar olives (or canned olives, for that matter).

For example, because some people microwave broccoli, does that mean you would stop eating broccoli all together? Don't throw the baby out with the bathwater. You only eat good foods. Only eat good olives. End of story. Beginning of the rest of your life with lovely salad!

I've only eaten ELF olives for a long time. Silver Leaf kalamatas were awesome, too, but only accessible on the east coast. sad smiley

This is seriously depressing as I've been craving olives and avos for days now. None to be had in my area (none that aren't suspect or very, very costy at least). I am sad and hungry at the moment.
