I can't imagine eating 3 TBSP of coconut oil daily, whatever would I put it in? It's positively nasty in smoothies, forms greasy little particles, ugh. How do you eat it? I like it on popcorn but have that very rarely. I don't know how I would eat so much of it, I don't think I'd be able to get the kids to either.
I could put it on my face though, the recipe for that looks wonderful.

Here's a great recipe your children will LOVE!!!

Cashew Fudge

16 ounces of Raw Cashew Butter
1/4 Cup of Coconut Oil
1/4 Cup of Agave Nectar
2 oz. of Raw Cacao (or 2-3 Tbsp. Raw Carob)

Mix ingredients and freeze for 2 hours. Serve directly upon removing from freezer. Grind Cacao Nibs in a coffee grinder and leave some (~1/4) unground for a chocolate chip effect.

John Rose, the concern with your recipe is that it contains so much cashew butter PLUS the coconut oil.

Well, those both sounds tasty but are full of stuff I wouldn't eat. I am looking to have coco oil daily to help shift my slightly out of whack thyroid, so much sweet stuff is not for me. Maybe I'll see if there's some kind of savory recipe out there.

QUESTION: What is the relationship of radishes to the thyroid gland?

ANSWER:

Radishes contain raphanin (mainly sulfur), which is responsible for keeping the production of thyroid and calcitonin (a peptide hormone) in normal balance. With proper amounts of raphanin circulating in blood plasma, the thyroid won't under or over produce these two hormones. This makes balancing the thyroid, treating thyroid diseases as well as Graves disease a small miracle of the tangy, little red radish. The sulfur amino acids in radish juice help break up fat deposits in the liver as an added bonus.

Try juicing 1/2 cup sliced radishes with green tops into your carrot-apple juice for great variety and thyroid health.

PS: Charlotte Gerson said this is acceptable while on Gerson Therapy and a healthful thing to do. Always remember, balance, and don't overdo a good thing.

Hi coco,

cool graphic. I like the little characters.

I don't use coconut oil often, but when I do, I warm it slightly before using it. It goes liquid at about 80 deg F.

To add it to smoothies or dressings, try adding the melted oil to the other ingredients when the blender is running so it mixes in before it hardenes again.

I sometimes add a melted spoonful with some lemon squeese to my flax/herb salad mix and turn the powder into a spread.

I've never tried it, but lots of my students have and no one has ever complained. So it must not be too bad as long as you add some carrot and apple juice to it.

This recipe calls for quite a lot of coconut milk - perhaps you can substitute it with coconut oil and water?

Satay Sauce (yields about 3 cups):
1¼ cup fresh coconut milk
¼ cup + 2 tbsp almond butter
¼ cup tahini
3 garlic cloves
3 tbsp tamari
2 tbsp olive oil or sesame oil
2 tbsp lime juice
1 tbsp agave
3 tsp Satay spice mix
1 1/2 tsp cumin
¾ tsp coriander
1/2 tsp chili powder 
1/2 tsp sea salt

Blend all ingredients until smooth. The sauce is good with zucchini and kelp pasta and marinated veggies (pretty much anything you like)

This is another savoury recipe which calls for milk:

Carrot Soup
^^^^^^^^^^^^^^
8 large carrots
½ cup cashews, soaked in water for about 4 hours (you may omit or try macadamia nuts instead)
½ inch slice of red onion or 2 green onions
2 ½ cups coconut milk (can use water instead)
2 ½ cups water
½ small avocado
1 small tomato
¼ cup fresh young coconut meat (can use dried coconut instead)
1 teaspoon curry powder
salt and lemon pepper to taste

Toss all ingredients except juice into a blender and process until smooth. Add juice by hand.



And this one calls for 1 tbsp of coconut oil:

Sweet Potato Mash
^^^^^^^^^^^^^^^^^^^^^^^^
1½ cup peeled & chopped sweet potato
1 cup chopped carrots
¾ cup water
½ cup cashew
1 tablespoon coconut oil
½ teaspoon cumin½ teaspoon salt

In a high speed blender, combine the water, cashews, coconut oil, cumin and salt.  Blend until very smooth.  Add the sweet potato and carrot and blend again until very smooth, creamy & warm.

That last recipe looks doable, I'll try that, thanks! Unfortunately the oil is not a good substitute for the milk though, that would end up being very oily.

I've found some recipes, kale chips make with melted coco oil instead of olive oil.
Here's one for a tart/pie crust that could be savory or sweet. It calls for coconut butter which is not the same as coconut oil but I happen to have a jar in the fridge anyhow, ha ha:

Ingredients:

2 cups macadamia nuts
1/4 cup coconut flakes
2 tbls coconut butter
pinch of salt
Pulse until crumbly but not so long it gets oily. Press into tart pan.

coconut oil is kind of a double edged sword to me

i used it a few times to make salad dressing

but then, one time, i was on a juice fast ( for a coupla days)

but i've done a lot of those before
and never ever once had a problem

but this one time
on day 2 ( i think)

i decided that for energy , i'd have a teaspoon of coconut juice
cuz i heard that it was good for endurance athletes etc.

and .. ohhh MY GAWWWWWWWWWWWWWWWWWWSSSSHHHHHHHHHH!!!!!

i was doubled up
in the most gosh awful excruciating pain i ever experienced in my stomach in my entire life

i experienced pain with coconut oil in the past too ( like 2 or 3 other times)

and i never get that with any other food

ever

so i looked up coconut oil

and sure enough

LOTS of people reported abdominal pain with coconut oil

and i had a raw brand "artisana"

and its pretty good, actually

but i guess fasting and coconut oil together and eating it ALONE without other foods (like with a salad dressing, combine ingredients and eat with fibrous greens)

was an absolute no no

what is it about coconut oil that makes one have abdominal cramps when taken alone

it seems like i'm not the only one

and like i said

no other foods has that effect on me

i don't have any allergies or sensitivities to any other raw foods

at all

whatsoever

coconut oil

is suspect in my book

but coconut juice
and fresh coconut

we get along

just fine

so it must be something about the processing process?

i don't know

nevertheless

it always did smell good

and taste good ( in salad dressings)

but it scares the heck out of me

the mere thought of having a tablespoon a day

especially on an EMPTY stomach

WHOAAAHHHHH....!

is all i can say

is it just me or is coconut oil

one CRAZY animal!!

eat it with other foods

is all i can say

maybe it helps to absorb something in it

I do, but only a tiny bit and only in places where I notice my hair is particularly dry or frizzy (I have a curly hair)

Because if you put too much the hair straight away becomes greasy. But I'm wondering, is it still beneficial for the hair, so that you can put it on in generous amounts as a mask, when you are staying in (say in the evening and then wash your hair in the morning before going to work)

Prana, they are not abundant where I live. Kind of a pain in the butt to deal with too, truth be told. I'm looking at food solutions to thyroid imbalance and coconut oil scores high on the list. I'm already taking iodine and it seems to be helping.

I have not had the AC on--stubborn environmentalist, me!--and when I went to grab the jar of coconut oil out of the pantry to use it for a meal, I noticed it had reliquified in the heat of the kitchen. I took some on a spoon thinking, "Hey, I can spit this out if it's disgusting," but it was quite pleasant and went down smoothly. I agree with swimmer that it is easier to consume in a liquified state; it doesn't at all resemble Crisco that way smiling smiley

I got some organic cold pressed coconut oil and it tastes fine to me. More than fine, actually. It only becomes greasy, so I am told, at the temperatures below 76F. I have no problem with taking several tea spoons of coconut oil a day I actually enjoy it. I am not good with making salads, but I imagine I would love a salad with the taste of coconut oil.
Eating young coconuts is not an option in Chicagoland, unless you have very solid income.

You could try adding some coconut oil under your arms since substances are readily absorbed there.

If you use any kind of spread for bread type items you could try spreading a little coconut oil instead. Or cut in about half the amount with the other type spreads.
