What to eat sauerkraut with?

sounds great on a vegan hot dog, but i dont eat vegan hot dogs anymore.

what can i eat sauerkraut with? romaine leaves?

occaisionally i toss my sauerkraut with zuchini noodles sprinkled with hemp oil and powdered garlic

the savory of the zukes and the tangy of the kraut taste good to me smiling smiley if you dont or cant to make zuke noodles, you could always hollow out the zuke and fill it with the kraut ..kinda like a reverse hotdog grinning smiley

It is great with beetroot, carrot, avocado, some seaweed flakes, some romaine lettuce, some onions or broccoli or radish sprouts for kick, and anything else you want to add on top (such as tomato and/or cucumber etc). Everything is chopped/grated and mixed. Basically the idea is to replicate a Russian salad called Vinaigrette, only raw.

There are some concerns from Natural Hygiene folks that the fermentation process of making sauerkraut may result in alcohol that may be poisonous. So the question is should it be eaten before finding what to eat it with?

A very small amount of alcohol is created during the fermentation process. Per dose you would be getting a very small amount. Natural Hygeine like most other things doesn't understand the process of fermentation and equate it to rotting food, which is exactly the opposite of what fermentation achieves, which is to prolong its shelf life and preserve food through the lactic acid bacteria.

You would get much more alcohol eating ripe banana's that natural hygeine folks often recommend. Especially if your eating 20+ ripe bananas a day like some raw foodists recommend.
