The whole huge pumpkin for less than a dollar.
They are hard to juice.
Can the seeds be eaten raw?
Any raw recipe?

Seeds can be eaten raw and make a nice pumpkin seed milk too. Just blend and strain smiling smiley

Remember that the more mature a pumpkin, the more starchy and less fruity it will be, and also more grainy. So avoid huge jack-o-lantern pumpkins, if you can and favor smaller, darker orange ones.

Long ago, I made a "pudding" with blended raw pumpkin, a small amount of soaked chia seeds, raw agave, a spritz of lemon juice and a pinch each warm spices--cinnamon, nutmeg, allspice, cloves--and it was scrummy! Didn't follow a recipe, though, so that's the best I can post as a guide.

Almost Instant Pumpkin Pudding
Makes 4 servings

Ingredients:

• 1 cup unsweetened almond milk
• 2 cups pumpkin (not pie filling)
• 1 banana
• 2/3 cups pitted dates
• 1 tablespoon alcohol free vanilla
• 1 tablespoon pumpkin pie spice
• 6 tablespoons chia seeds

Instructions:

Place all ingredients in blender except for chia seeds and blend until smooth.

Add seeds and blend again, adding more milk if necessary to achieve a vortex.

Pour into 4 bowls and cover with Saran, chill several hours or overnight.

Dust with cinnamon before serving.

It's the variety + level of maturity that determine the relative starchyness or sweetness. And if sweetness (not starchyness or wateryness) is what you want, then you look for specific varieties. Immature pumpkins, even of the small, dark orange ones, aren't awfully sweet. They are more watery. In my experience, a real mature jack-o-lantern type is sweeter than an immature small, dark orange variety.
