Hi Mike

Can you give us a basic nut and seed yogurt/cheese recipe?

Can you try making some habenaro pepper powder with your dehydrator and let me know how it works out?

No snow yet, now they say tomorrow and tomorrow night.

Here is a basic recipe I use. It is from Lou Corona. You can use different nuts and seeds. Sunflower seeds are one of my favorites.

Nut Yogurt

- 1 cup of almonds (pre-soaked for 24 hours in pure water)
- 1 cup of pure water

Place in blender until mixture is creamy. Pour into a container and add:

- 1/2 teaspoon probiotics or 1 Tablespoon miso

Let sit at room temperature for 6 to 8 hours. The mixture will ferment sooner depending on the temperature of the kitchen.

Once the mixture is fermented, add it to your smoothie and store the remaining yogurt in the refrigerator. The nut culture will keep for up to a week, but will get more sour each day.

Keep about 2 tablespoons of the mixture as a starter to add to the next batch yogurt. The starter will produce a more active culture.

Add in your favorite herbs, spices, and seasonings for variety. I like to add in foods such as young coconut meat, dill, chives, and garlic.

Lately I have been using the E3 Live probiotics for sauerkraut and seed cheese. I like them better than Primal Defense.

Great, thanks Mike, I have a bowl of almonds going with primal defense as the controling activator. I will try every nut and seed to see how they all work.

My almond seed cheese came out very sweet. Probably wont last long enough to turn stronger in taste.
