Help, Raw Almond milk going sour next day.

My wife has tried making raw almond milk twice but it goes bad the next day. Smells like sour cream!

We tried Non-pasterized and Pasterized almonds. We place it in the fridge imidelty after extracting the milk from the sprouted almonds. Almonds taste fine before making the milk. We are using distilled water.

Any idea?

I doubt anyone here will agree with me but the taste that gets sucked out of nuts when you sprout them also removes elements which keeps nut milks fresh.

Try this if you want to test what I'm saying. Soak you almonds just overnight in the fridge and then make your almond milk from them before they sprout. Please let us know how it goes.

clank72, Please blanch the almonds after sprouting as suggested by Ann Wignore, it should avoid quick fermentation/rancidity or try adding little vanilla bean powder, blanched almonds will result in pure white milk (no tannin, salicylate etc., also it increases lysine), kids, guests and elders also will enjoy this great drink .

Thanks. The almonds were blanched.

I can tell you they were left on the counter for 12 hours. The water was changed a few times.

The almond cheese we made with the remains is still good. But the milk went sour right away.

She has made it before with no problems. I guess it's a mystery! :-)

Maybe the almonds were less vital this time that previous efforts to make almond milk, so the almond milk spoiled faster than the other time. Were these almonds old?
