Transitioning -- A Few Questions!

Hello! I'm new here on the boards and am also just starting a transition to a high-raw diet.

Although I've been doing my reading - both online and from whatever books that I may get my paws on - I have a few questions. Some of these may seem basic (or even silly) but I'd appreciate any answers/advice:

When soaking nuts, do you leave them in the fridge or on your countertop? Is this safe in warm weather?

Are there any precautions to making rejuvelac in warm weather?

Do you have a prefered sprouting method?

Any advice on using a mandoline slicer? (I have only used mine once - had to run to Urgent Care, despite using a glove!)

And, just a curiousity, are there any "raw" foods that you personally choose to abstain from (e.g. green peppers, cacao, etc)?

The countertop is fine for a few hours. The fridge is better for overnight.

I'm basing my above opinion on 72 F room temperature.

Yuck. None of that rot for me at any temperature.

Yeah, who needs that crap? Use your hands free lightning fast graters on your food processor or a manual s/s cone grater.

No unripe green peppers or raw mushrooms for me. No GMO foods. No high glycemic fruits. No more than 120 carbs total a day.
