Best Nuts/Seeds for Yogurt/Cheese?

Date: July 25, 2014 06:21PM Most recipes I've come across use either almonds or cashews. I'm allergic to almonds and have to temporarily abstain from cashews while treating my candida, so I was wondering what alternatives would taste best for in a fermented cheese or yogurt.
I've heard pine or Brazil do well for cheese -- would Brazil nuts perhaps be mild enough for yogurt? How about seeds? I'm not sure if sunflower seeds would taste too grassy. Re: Best Nuts/Seeds for Yogurt/Cheese?

Date: July 25, 2014 07:42PM Hi Manta91, here's a recipe for sunflower an pumpkin seed cheese:
[www.superfoods-for-superhealth.com] Panchito, That's great information (thanks), but don't you think Dr. Greger was referring to a different kind of cheese (cow's milk) than the cheese Manta91 was referring to (from nuts or seeds)? Re: Best Nuts/Seeds for Yogurt/Cheese?

Yeah, I've never seen this kind of recipe before - nut cheese with probiotics. I haven't tried it, but maybe I will. Re: Best Nuts/Seeds for Yogurt/Cheese?

i love probiotics and if they can proliferate naturally due to initial adding of probiotics to the matter then.... all the better Re: Best Nuts/Seeds for Yogurt/Cheese?

Date: July 27, 2014 12:42PM Back when I was eating overt fats, I used walnuts as my favourite for making nut cheese, they go well with lemon juice and dill, it's a very pleasant mixture.
I also used sunflower seeds, the resulting cheese was very good. I tried with pumpkin seeds too, and the cheese was tasy and with a different, specific taste similar to parmesan cheese. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Raw vegan for life. Date: July 27, 2014 08:32PM Ela, I wouldn't have thought of using walnuts but will have to give it a go. I love lemon & dill.
Also, thanks Suncloud for the recipe. I'm also kind of surprised by the use of pumpkin seeds. I've always thought of them to have a smokey flavor more suited for "meaty" pates. Re: Best Nuts/Seeds for Yogurt/Cheese?

Date: July 29, 2014 05:27PM I think you will love the walnut cheese. Plus the walnuts are rich in Omega 3. I used to make walnut mayo too, just blending soaked walnuts and lemon juice until very creamy. Then used the mayo for making a veggie mayo salad (finely chopped veggies mixed with the mayo). I always used the food processor with the "S" blade for making cheese/mayo, never tried in the blender.
