Date: February 13, 2007 03:14AM the raw type of course. If anyone knows how to make this dish with both a carob cream and a vanilla cream that'd be a plus. I just had some in Chicago that was served on a bed of crushed almonds, strawberries, and the two creams. It was awesome.

While I have never made a raw tiramisu I have made plenty of "cooked" tiramisu in my life so I can take a guess at a couple things. For the cream portion (typically made with mascarpone) I would use soaked cashews, vanilla, cinnamon, coconut butter or cacao butter (gentle softened but not melted) and a splash of coffee extract. I would blend this together till I got a heavy cream-like consistency. I recommend the cashews because they tend to have the creamiest consistency. The lady fingers would be the most difficult to replicate as they have a sponge like consistency that would be hard to mimic in a dehydrator. If I was going to attempt it though I would use finely ground macadamia nuts, dates, cinnamon and more coffee extract. The topping is easy enough as it is usually just a dusting of cinnamon. I like a good challenge and I may just attempt this and see how it turns out. I'll keep ya posted. My website: The Coconut Chronicles Edited 1 time(s). Date: February 13, 2007 03:53AM I would replace the coconut butter possibly with meat from young coconuts and use almond flour leftover from almond milk. basically just look at a raw almond cookie recipe and shape them like lady fingers.
