i would like to know that are dates raw/processed/heated?

Most store bought dates are processed and heated. The typical process is to steam dates to moisten them and make them softer. These dates have shiny skin.

An earlier thread gave the contact info for people who have unprocessed raw dates. Also, if you live in the San Francisco bay area, the Flying Disc Ranch sells organic raw dates at the San Francisco (Saturday) and Berkeley farmer's markets.
