Raw Food Salad Recipies You Could Share

Right now I am drawn to salads as a main meal. Although I prefer NOT to, I CAN use olive oil or any other oil that is not considered toxic among the gurus here. And since I am new to this, but am very determined, i need ideas to keep the taste buds interested. Lastnight my wife sat beside me and ate a whole bag of microwave popcorn. I had none.

I also prefer to cut my own stuff, rather than using a food processor. But if it comes to it, I suppose I can buy one.

Right now I am interested in a raw Gespacho recipie.

you`ll get plenty of ideas from this forum i`m sure but another recipe site i love is www.goneraw.com

i found an awesome gazpacho recepie there!!!!! looks like I need a juicer and food processor. Care to recommend any???

-How about finely chopped Kale salad tossed with lemon juice, garlic, and almond slivers......and topped with a carrot/ginger dressing?

-How about a mixed julienned cabbage salad - spicy - with a lemon/garlic/pepper marinade.......tossed with julienned carrots, sweet pepper, and topped with sprouts and raw sunflower seeds?

-You've always got your hardy leaf spinach salad with lime, walnuts and portabello mushrooms.

This recipe uses watermelon instead of tomato for an unusual twist to traditional gazpacho. Served chilled, watermelon gazpacho is refreshing as an appetizer or on a hot day. The flavor is a little bit sweet and a little bit salty. This is also a raw food recipe.
INGREDIENTS:
approx 3 cups of watermelon, chopped
1 cucumber, diced
1 red or yellow bell pepper, diced
1 small onion, chopped
2 tbsp lemon juice
1 tbsp olive oil
1 jalapeno
2 tbsp fresh chopped parsley
dash salt and pepper to taste
PREPARATION:
In a blender or food processor, place about half of the watermelon, cucumber, pepper, and onion and all of the jalapeno. Add olive oil and lemon juice and puree until smooth.
Combine the remaining ingredients in a large bowl and mix well.


Add more salt and pepper, to taste.
Chill for at least one hour, to allow flavors to combine, and stir well before serving.

Serve chilled and enjoy

or traditional style...

Gazpacho is a chilled Spanish soup that is refreshing on a hot summer day. This basic recipe can be dressed up with some croutons or hot sauce, depending on your taste. Don't be fooled by the long ingredients list, as gazpacho is a breeze to prepare.
INGREDIENTS:
1 cucumber, sliced into chunks
4 large ripe tomatoes
1/2 bell pepper, any color
2 cloves garlic
1 celery rib, chopped
1 tbsp lemon juice
1/2 sweet onion, quartered
3 tbsp red wine or balsamic vinegar
1/2 tsp salt
dash black pepper
1 tsp chopped fresh parsley
1 tsp chopped fresh basil
1/4 tsp cayenne pepper (optional)
PREPARATION:
Simply combine all the ingredients in a blender or food processor, except the fresh herbs and process until smooth. Stir in the herbs, refrigerate until cool and serve with bread.

Here's a salad I've been loving:

4 cups mixed greens
1/2 a red pepper, sliced thin
1 small onion, sliced thin
1/2 cup shredded carrot
a handful of sprouted lentils
1 tbsp raw sesame seeds, crushed in a mortar
a splash of olive oil and ACV
1/2 an avocado, cubed

that's a cool twist, but i am not wholly sure how my stomach will take watermelon since pre-raw days it was rough. but having been raw for nearly a week, much of my equilibirum has been restored and where bannanas used to make me feel bloated, they no longer do. The natural fauna in my body appears to slowly start showing up again. smiling smiley

also, in the past for ME, watermelon was a trigger for IBS.

my sister gave this to me and I added the portabellas.

baby spinach
raw pine nuts
portabella diced
fresh squeezed lemon juice
sea salt
fresh ground pepper

raw lemon juice goes a long way. mix to your pleasure. very tasty.
